Oscar's Coconut Chia Porridge

Oscar LOVES porridge. Which is lucky because we have it for breakfast every morning!


I think porridge is so versatile - there are so many different flavours it can go with. I mix Oscar's porridge with different fruits and toppings every day so he doesn't get bored and has a good variety in his diet.



Banana is most definitely Oscar's favourite fruit though (possibly his favourite food), so I have used bananas for this version of the recipe!


When I am making porridge in the morning, I usually make a big bowl for myself and then just scoop out a couple of tablespoons for Oscar, but for this recipe I will put the measurements as if just making for Oscar.


Ingredients:

2 tablespoons oats

150ml water

1tsp coconut oil

1 tsp chia seeds

1 small banana (or half a big banana) mashed

sprinkle of cinnamon


Method:

Mix the oats and the water together then microwave for about a minute and a half, taking out halfway to stir. Then stir in the coconut oil till fully melted. Add in the chia seeds and mashed banana, and mix well. Top with a sprinkle of cinnamon.


Thats it! So easy but full of vitamins and healthy fats.
